Buffalo Chicken Grilled Cheese

It's as delicious as it sounds, trust me. It's ooey and gooey with just the right amount of heat. Think buffalo chicken dip, but covered in cheese and on a sandwich. YUM!

First things first, you'll shred some chicken. I had a rotisserie chicken in the fridge from last night's dinner, so I just pulled what was left off of the chicken and shredded it, but you can make a chicken breast or thigh and shred it and it will work just as well. You just need about a cup of shredded chicken. You'll also add cream cheese, shredded Monterrey cheddar cheese, ranch dressing, and Beano's Buffalo Sandwich Spread. The proportions are kind of to taste, but we'll go over the specific recipe I used below.


The key to getting the texture and flavor on point is to cook the mixture until the cheese and cream cheese melt together. At this point, I typically add a little extra buffalo sauce. To me, this is the real star of the show!




Once the mixture is melted together, I coated the pan in a little bit of butter and place a piece of bread in the pan. I then put the mixture on the bread and put sliced cheese on it. Then let it melt down and get nice and tasty!



As with any grilled cheese, one of the best parts, is a nice, browned crusty bread. I flipped my sandwich a couple of times until the cheese was melted into the buffalo chicken mixture and the bread was browned and crispy.



And this tasty sandwich was the final product! Of course, the recipe makes two, so you can share with someone special, or just eat both yourself!

Ingredients for 2 sandwiches:

  • 1 cup of shredded chicken (I used leftover rotisserie chicken)

  • 1/2 cup shredded Monterrey cheddar cheese

  • 1/4 cup cream cheese (room temperature)

  • 2 Tablespoons ranch dressing

  • 4 slices Italian bread

  • 2 slices Monterrey cheddar cheese

  • Butter for coating pan

  • Optional: serve with celery

Directions:

  1. Mix chicken, shredded cheese, cream cheese, buffalo sauce, and ranch dressing until combined.

  2. Cook mixture in a medium pan on medium heat for approximately 5 minutes, stirring occasionally, until the cream cheese and shredded cheese are melted together. Optional: add a little extra buffalo sauce here!

  3. Either place mixture on a plate and slightly rinse pan or use a second pan. Coat the pan with butter, place one piece of bread, followed by half of the buffalo chicken mixture and a slice of cheese torn in half. Repeat for second sandwich.

  4. Place the other piece of bread on top and flip.

  5. Remove from pan with the cheese is melty and the bread is golden brown.

  6. Cut and enjoy!
